Festival of Delights ~ Star-Shaped Sweet Potato Fries!
Your little ones will think these star sweet potatoes are tops because they can help you make them!
Ingredients:
- 2 pounds sweet potatoes
- 2 Tbs. olive oil
- Sea Salt
- 1 cup low-fat Greek yogurt
- 1 Tbs. honey
Directions:
- Peel sweet potatoes and slice 1/3 inch thick. Have your child make star shapes with cookie cutters. Keep leftover pieces with the design cut out. Cover 2 large baking sheets with parchment paper and preheat oven to 325 degrees Fahrenheit.
- Let your child toss the potatoes with oil and place them on baking sheets. Ask her to sprinkle on sea salt. Bake 30 minutes, or until tender when pierced with a knife. (Or put them on a microwave-safe plate and cook them on High for 3 minutes.)
- Help your child pour the yogurt and honey into a medium bowl and mix them together with a spatula. Once the fries have cooled for a few minutes, transfer them to a plate or a platter and place the yogurt dip on the side. Serves 6.
