44 Days Until Christmas!

 

As a full-time blogger, I am on my computer...a LOT!  Probably more than I realize or even want to admit sometimes.  Unfortunately, my diligence on the computer has come with one major downfall.  I have some serious pain in my shoulder and neck area pretty much constantly.  This all began about six months ago, curiously enough about the same time that I started blogging.  It took me a while, but I finally put two and two together.

As my husband and I grow older, we have become increasingly concerned with what we put in our bodies.  Now that we have become parents, we really tend to watch what kinds of food we eat and actually scrutinize the ingredients of those foods we choose to give to Riley.  The one thing that I've become aware of since reading food labels more carefully, is that good foods are hard to find.

Colossal Christmas Countdown Holiday EventFestival of Delights ~ Star-Shaped Sweet Potato Fries!


Your little ones will think these star sweet potatoes are tops because they can help you make them!

Ingredients:

  1. 2 pounds sweet potatoes
  2. 2 Tbs. olive oil
  3. Sea Salt
  4. 1 cup low-fat Greek yogurt
  5. 1 Tbs. honey


Directions:

  1. Peel sweet potatoes and slice 1/3 inch thick.  Have your child make star shapes with cookie cutters.  Keep leftover pieces with the design cut out.  Cover 2 large baking sheets with parchment paper and preheat oven to 325 degrees Fahrenheit.
  2. Let your child toss the potatoes with oil and place them on baking sheets.  Ask her to sprinkle on sea salt.  Bake 30 minutes, or until tender when pierced with a knife.  (Or put them on a microwave-safe plate and cook them on High for 3 minutes.)
  3. Help your child pour the yogurt and honey into a medium bowl and mix them together with a spatula.  Once the fries have cooled for a few minutes, transfer them to a plate or a platter and place the yogurt dip on the side.  Serves 6.

If there's one thing I take extremely seriously, it's my daughter's health and well-being.  I want her to eat right and get plenty of exercise so she will grow up happy and healthy.  Kids have so much fun running, jumping and playing, that they usually get their daily exercise in by just having FUN!  (I wish I could say the same thing, but unfortunately, my workout videos don't exactly put a smile on my face!)
