Wheels-on-the-Bus Pasta Salad
This Southwest-inspired pasta salad will get your wheels spinning again and transport you back to class fully fueled.
Servings: 1
- 1/3 cup dried small wagon wheel pasta
- 1/3 cup rinsed and drained canned black beans
- 1/4 cup fresh or frozen whole kernel corn
- 1/4 cup halved cherry tomatoes
- (1) tbsp. light ranch salad dressing
- 1/8 tsp. chili powder
- 1/4 cup crushed candy canes
- (1) 4.25 oz. container diced peaches in light syrup
Directions:
- 1. Cook pasta following package directions. Put colander in the sink. Using hot pads, carefully pour pasta into colander to drain. Rinse with cold water and let drain.
- 2. Put pasta, beans, corn and tomatoes in a medium bowl. Stir to mix. Put ranch dressing and chili powder in the small bowl. Stir to mix. Pour dressing mixture over pasta mixture. Stir until all ingredients are coated. Spoon into a storage container. Cover and seal. Put in refrigerator until chilled or up to 12 hours.
- 3. To tote, put storage container with salad, container with peaches and plastic spoon in lunch bag with an ice pack. Seal bag.
