In browsing through this yummy cookbook, I found a ton of recipes that I know my family will enjoy. Of course, the Southern girl in me can't wait to give this recipe a try:
Shrimp and Cheddar Grits
(Start to finish: 35 minutes)
Ingredients:
- 1 pound medium shrimp in shells
- 4 cups water
- 1/2 teaspoon salt
- 1 cup stone-ground grits
- 1 cup shredded sharp cheddar cheese
- 1 tablespoon butter
- 2 cups sliced mushrooms
- 1 clove garlic, minced
- 1 tablespoon peanut oil
- 1/8 teaspoon ground black pepper
- Few dashes bottled hot pepper sauce
- 4 slices bacon, crisp-cooked, drained and crumbled
- 1/4 cup sliced scallions (2)
- 3 tablespoons snipped fresh parsley
Directions:
1. Peel and devein shrimp. Rinse shrimp; pat dry with paper towels. Cut shrimp in half lengthwise. Set aside.
2. In a large saucepan, bring the water and salt to boiling. Gradually stir in grits. Reduce heat to low. Cook, uncovered, for 20 minutes or until thick, stirring frequently. Add cheese and butter, stirring until melted; set aside.
3. Meanwhile, in a large skillet cook mushrooms and garlic in hot oil over medium heat for 3 minutes. Increase heat to medium-high. Add shrimp; cook and stir for 2 to 3 minutes more or until shrimp turn opaque. Stir in pepper and hot pepper sauce until combined.
4. Transfer grits to a serving dish. Top with shrimp mixture. Sprinkle with bacon, scallions and parsley.
Makes 6 servings.
