I've been a picky eater all of my life and was especially hard to handle when I was a young child. You know how your mother says that whatever you did as a kid will come back to get you once you become a parent? Well, that's definitely happened to me, for Riley has followed right along in my picky eating footsteps. Getting her to want to eat has always been a battle since day one.
Thankfully, Hellmann's has created the Chicken Change-Up event featuring celebrity Chef Tim Love. The recipes featured will help us all take charge of our family dinners and serve quick, easy and budget-conscious dishes that the whole family will clamor over. Keep reading to learn more and see for yourself what my finicky eater thought of the Chicken Nuggets with BBQ Sauce recipe I prepared!
I was extremely happy with the large selection of quick and easy recipes available on Hellmann's Facebook page. The hardest part was trying to narrow it down to just a few and then to finally choose just one to serve for dinner tonight. What really helped me the most was the wonderful "cost per recipe and cost per serving" feature located at the bottom of each recipe. With this valuable information, I could easily decide which dish would fit well with my family's food budget.
In the end, I decided to prepare the Chicken Nuggets with BBQ Sauce. I don't know what it is, but all children seem to like chicken nuggets and my daughter is no exception. What I loved about these nuggets though, was that they had plenty of flavor, yet were baked and not fried. They didn't sacrifice any of the crispy crunch of typical fried nuggets either, thanks to coating them in bread crumbs before baking.
Chicken Nuggets with BBQ Sauce
INGREDIENTS:
- 3/4 cup Hellmann's® or Best Foods® Real Mayonnaise
- 1/2 cup barbecue sauce
- 1 Tbsp. Dijon mustard
- 4 boneless, skinless chicken breasts (about 6 oz. ea.), cut into nuggets
- 1/2 cup Italian seasoned dry bread crumbs
DIRECTIONS:
- Preheat oven to 375°.
- Combine Hellmann's or Best Foods Real Mayonnaise, barbecue sauce and mustard in small bowl. Reserve 1/2 cup sauce; set aside. Evenly coat chicken with sauce, then bread crumbs. Arrange chicken on baking sheet.
- Bake 15 minutes or until thoroughly cooked. Serve with reserved sauce.
